The party jollof. Long-grain rice cooked down in a base of fire-roasted pepper, bay, thyme, and curry. Each batch finishes over open flame so the bottom catches the way it should. Plated with a quarter chicken.

The curry-yellow kind. Long-grain rice tossed with carrot, green bean, sweet corn, liver, and shrimp. The version that shows up at every Naija birthday party.

Meet Holly

A cook from Lagos Mainland, feeding Toronto from her kitchen.

Holly's mother ran a busy catering business out of their house on Lagos Mainland. By age ten, Holly could grind pepper for stew with her eyes closed. She moved to Toronto, started cooking for friends, then for friends-of-friends, then for full owambes. Holly's Kitchen has been taking orders since 2017. A storefront is on the way.
