The party jollof. Long-grain rice cooked down in a base of fire-roasted pepper, bay, thyme, and curry. Each batch finishes over open flame so the bottom catches the way it should. Plated with a quarter chicken.

The curry-yellow kind. Long-grain rice tossed with carrot, green bean, sweet corn, liver, and shrimp. The version that shows up at every Naija birthday party.

Meet Holly

A Lagos cook, feeding Toronto from a small kitchen.

Holly's mother ran a catering business out of the family house in Surulere. Holly grew up in that noise — pots on the fire, yam being pounded, trays going out to weddings. She moved to Toronto, missed the food, and started cooking it for friends. Word got around fast. Holly's Kitchen has been taking orders since 2017, and the storefront is next.
